Watermelon Mint Cooler
Watermelon, lime and mint, blended and poured over ice. Three ingredients, no dairy, and the best thing to hand somebody who has been outside in August.

Ingredients
- 6 cups Watermelon, cubed, seeds removed
- 2 Lime
- ½ cup Fresh mint
- 1 tbsp Honey (optional)
- ⅛ tsp Kosher salt
Method
- Freeze half the watermelon cubes for an hour if you have time. Frozen fruit chills without diluting.
- Blend everything, then taste before adding any honey — a ripe August melon needs none.
- Strain it through a sieve if you want it clear and drinkable rather than pulpy.
- Pour over ice with a mint sprig. For adults, it takes a splash of something at a cookout perfectly well.

- A pinch of salt. It makes watermelon taste more like watermelon, which is why street vendors in Mexico salt it.
