Everything Tahini Sauce

Ingredients
- ½ cup Tahini
- 4 tbsp juice Lemon
- 1 clove Garlic, grated
- ¼ tsp Kosher salt
- ½ tsp Ground cumin (optional)
- 1 tsp Pure maple syrup (optional)
Method
- Whisk tahini, lemon juice, garlic and salt. It will seize into a stiff paste and look ruined. It is not.
- Whisk in cold water a tablespoon at a time — usually 4 to 6 total — and it will suddenly turn pale, smooth and pourable.
- Thin further for drizzling, leave thicker for dipping.
Notes

- Grate the garlic on a microplane rather than mincing it so there are no raw chunks.

- Add the teaspoon of maple. It takes the edge off the sesame bitterness that kids notice and adults don't.

- 1 week refrigerated. It thickens; whisk in water.
