Heart-Smart Overnight Oats
Five minutes on Sunday night, four breakfasts done. Oat beta-glucan plus chia plus walnuts is about as heart-forward as a bowl gets.

Ingredients
- 2 cups Old-fashioned rolled oats
- 3 tbsp Chia seeds
- 2 cups Unsweetened soy milk
- ¾ cup Plain nonfat Greek yogurt
- 2 tbsp Pure maple syrup
- 1 tsp Ground cinnamon
- 1 tsp Vanilla extract
- 1 cup Blueberries
- ½ cup Walnuts, chopped
- 1 Bananas, sliced (optional)
Method
- Stir oats, chia, soy milk, yogurt, maple, cinnamon and vanilla together in a bowl until there are no dry pockets.
- Divide into four jars. Press the berries down into the mix rather than sitting them on top so they bleed color and flavor overnight.
- Refrigerate at least 6 hours, up to 5 days.
- Add walnuts in the morning, not the night before — they go soft otherwise. Add banana slices to order.
Notes
- ✨ The restaurant touch
- A pinch of flaky salt on top of the chocolate version. It sounds wrong and it is not.
- 🧒 For the kids
- Let each kid pick their own jar's toppings on Sunday. Ownership does more for breakfast compliance than any amount of persuading.
