Heart-Smart Overnight Oats

Five minutes on Sunday night, four breakfasts done. Oat beta-glucan plus chia plus walnuts is about as heart-forward as a bowl gets.

Ingredients

  • 2 cups Old-fashioned rolled oats
  • 3 tbsp Chia seeds
  • 2 cups Unsweetened soy milk
  • ¾ cup Plain nonfat Greek yogurt
  • 2 tbsp Pure maple syrup
  • 1 tsp Ground cinnamon
  • 1 tsp Vanilla extract
  • 1 cup Blueberries
  • ½ cup Walnuts, chopped
  • 1 Bananas, sliced (optional)

Method

  1. Stir oats, chia, soy milk, yogurt, maple, cinnamon and vanilla together in a bowl until there are no dry pockets.
  2. Divide into four jars. Press the berries down into the mix rather than sitting them on top so they bleed color and flavor overnight.
  3. Refrigerate at least 6 hours, up to 5 days.
  4. Add walnuts in the morning, not the night before — they go soft otherwise. Add banana slices to order.

Notes

✨ The restaurant touch
A pinch of flaky salt on top of the chocolate version. It sounds wrong and it is not.
🧒 For the kids
Let each kid pick their own jar's toppings on Sunday. Ownership does more for breakfast compliance than any amount of persuading.
