Miso Butter Mushrooms on Toast

Mushrooms cooked past the point where they give up their water and start to brown, in butter cut with white miso. On thick toast this is lunch; on a small plate it is the thing people ask you to make again.

Ingredients

  • 5 cups Cremini mushrooms, sliced thick
  • 1 tbsp Extra-virgin olive oil
  • 2 tbsp Unsalted butter
  • 1 tbsp White miso paste
  • 2 cloves Garlic, thinly sliced
  • 4 sprigs Fresh thyme, leaves stripped
  • 1 tsp Low-sodium soy sauce
  • 1 tbsp juice Lemon
  • ½ tsp Black pepper
  • 4 slices Whole grain bread
  • 2 tbsp Flat-leaf parsley, chopped
  • 2 tbsp Parmesan cheese, grated (optional)

Method

  1. Heat the olive oil in a skillet over high until it shimmers. Add the mushrooms and do not salt them yet — salt draws out water and water is the enemy of browning.
  2. Cook 6-8 minutes, stirring rarely. They will release liquid, the pan will look wrong, and then the liquid will cook off and they will start to sizzle and brown. Wait for that second stage. Most mushroom disappointment is a pan turned off during stage one.
  3. Lower to medium. Add the butter, garlic and thyme, and cook 2 minutes.
  4. Stir the miso and soy sauce together with a tablespoon of water and pour it in. It will coat everything and reduce to a glaze in about a minute.
  5. Off the heat, add the lemon juice and pepper. Toast the bread properly — dark, so it stays crisp under the mushrooms — and pile them on. Parsley and parmesan on top.

Notes

✨ The restaurant touch
Rub the hot toast with a cut clove of raw garlic before the mushrooms go on. It takes four seconds and it is the difference between mushrooms on bread and a dish.
🧒 For the kids
Miso is savoury in a way some kids read as strange. Cook their share of the mushrooms in butter and a pinch of salt only, and put them on buttered toast cut into strips.
🌿 From the garden
Thyme and parsley grow in a windowbox. Mushrooms are the one thing here you buy — though a shiitake log in a shady corner is a genuinely rewarding project.
🥡 Leftovers
The mushrooms keep 3 days and are excellent stirred into eggs or pasta. Toast fresh bread every time.
