Almond-Date Energy Bites

No bake, no added sugar, five minutes in a food processor. The after-school food that is not a granola bar wrapper.

Ingredients

  • 1 ½ cups Medjool dates, pitted
  • 1 cup Raw almonds
  • ½ cup Old-fashioned rolled oats
  • 2 tbsp Unsweetened cocoa powder
  • 1 tbsp Chia seeds
  • 1 tsp Vanilla extract
  • ⅛ tsp Kosher salt

Method

  1. Pulse the almonds and oats until coarsely ground, about 15 pulses.
  2. Add dates, cocoa, chia, vanilla and salt. Run the processor 45-60 seconds until the mixture climbs the sides and holds together when you squeeze it.
  3. If it is crumbly, add a teaspoon of water at a time. If it is sticky, another spoon of oats.
  4. Roll into 20 balls. This is the part to hand to the kids.
  5. Refrigerate 30 minutes to firm up.
