Egg in a Hole with Wilted Greens

A piece of toast with an egg cooked into the middle of it, and a handful of spinach wilted in the same pan while the egg sets. Six minutes, one pan, and the cut-out circle is the best bit.

Ingredients

  • 2 slices Whole grain bread
  • 1 tbsp Unsalted butter
  • 1 tsp Extra-virgin olive oil
  • 2 Eggs (large)
  • 3 cups Baby spinach
  • 1 clove Garlic, thinly sliced
  • ¼ tsp Kosher salt
  • ¼ tsp Black pepper
  • 2 tbsp Parmesan cheese, grated (optional)
  • 1 tsp zest Lemon (optional)

Method

  1. Press a glass into the middle of each slice of bread and lift out the circle. Keep the circles — they toast alongside and they are the reward for whoever did the pressing.
  2. Melt the butter in the skillet over medium and lay in the bread and the circles. Let them go golden on the underside, about 2 minutes.
  3. Flip everything, then crack an egg into each hole. Season with half the salt and pepper. Cover the pan and cook 3 minutes for a set white and a soft yolk.
  4. While that happens, push the toast to one side, add the olive oil and garlic to the empty part of the pan for 20 seconds, then the spinach and the rest of the salt. It wilts in under a minute.
  5. Slide onto plates with the greens alongside. Parmesan and lemon zest over the top if you have them.

Notes

Lemon zest over a fried egg. It sounds like a stretch and it wakes the whole plate up.

Pressing out the circle with a glass is the entire appeal of this breakfast, and the toasted circle dipped in the yolk is the payment.
