Dal Tadka
Split lentils simmered soft, then hit with spices bloomed in hot ghee poured over at the table. The tadka takes ninety seconds and is the entire personality of the dish.

Ingredients
- 1 ½ cups Red lentils (dry), rinsed
- 1 tsp Ground turmeric
- 2 Roma tomatoes, chopped
- 1 tsp Kosher salt
- 2 tbsp Ghee
- 1 tsp Ground cumin
- 1 tsp Brown mustard seeds
- 5 cloves Garlic, sliced thin
- 2 Thai bird chiles, split (optional)
- ½ tsp Smoked paprika
- ½ cup Cilantro
- 1 Lemon
- 1 ½ cups Basmati rice
Method
- Simmer the lentils with the turmeric, tomatoes and 4 cups of water, partly covered, for 25 minutes, until they collapse into a loose porridge. Skim the foam in the first few minutes. Add salt only now — early salt keeps legumes firm.
- Whisk the dal briskly for a few seconds to smooth it out, and thin with hot water to the consistency of heavy cream. It thickens as it sits.
- Now the tadka. Heat the ghee in a small skillet until it shimmers. Add mustard seeds; when they pop, add cumin, then the sliced garlic and chiles. Fry 45 seconds until the garlic is pale gold — not brown, which is bitter.
- Kill the heat and stir in the paprika, which would burn in hotter fat.
- Pour the whole sizzling contents of the skillet over the dal at the table. It will hiss. Stir it in with the cilantro and a big squeeze of lemon, and serve over rice.

- Pour the tadka in front of whoever is eating. The sound and the smell are half of what the dish is.

- Leave the chiles whole and lift them out, or skip them. Dal with rice and a spoon of yogurt is one of the gentlest dinners there is.
