Crispy Gnocchi with Brown Butter, Sage and White Beans

Skip the boiling water. Shelf-stable gnocchi dropped straight into a hot pan turns into little crisp-shelled pillows, and brown butter with fried sage is the sauce that ruins you for other sauces.

Ingredients

  • 1 package Potato gnocchi (shelf-stable)
  • 1 tbsp Extra-virgin olive oil
  • 3 tbsp Unsalted butter
  • 12 leaf Fresh sage
  • 3 cloves Garlic, thinly sliced
  • 1 can Cannellini beans, canned no-salt-added, drained and rinsed
  • 4 cups Baby spinach, packed
  • 1 tsp zest Lemon
  • 1 tbsp juice Lemon
  • ½ tsp Kosher salt
  • ½ tsp Black pepper
  • ⅜ cup Walnuts, toasted and chopped
  • 4 tbsp Parmesan cheese, grated (optional)

Brown it first in the same skillet, lift it out, then start the gnocchi in the fat it leaves behind. Two minutes of extra work, and the vegetarian version is still the one everyone reaches for.

Method

  1. Heat the olive oil in a large skillet over medium-high. Add the gnocchi straight from the package — do not boil them — in one layer. Leave them alone for 4 minutes. Do not stir, do not check. That undisturbed contact is the entire recipe.
  2. Toss once and cook 3-4 minutes more until most sides are golden and the insides have gone tender. Tip them onto a plate.
  3. Turn the heat to medium and add the butter. It will foam, then quiet, then the milk solids at the bottom will turn the colour of a hazelnut and it will smell like toffee — about 3 minutes. Watch it. Brown butter goes from perfect to burnt in fifteen seconds.
  4. Drop in the sage leaves; they will crackle and crisp in about 30 seconds. Add the sliced garlic and cook 30 seconds more, no longer, or it turns bitter.
  5. Add the beans and spinach with the salt and pepper. Toss until the spinach collapses, 1-2 minutes.
  6. Return the gnocchi, add the lemon zest and juice, and toss once. The acid is what keeps all that butter from sitting heavy. Finish with walnuts and parmesan.

Notes

✨ The restaurant touch
Fry a few extra sage leaves and lay them whole across the top. They shatter like a chip and they are the first thing anyone photographs.
🧒 For the kids
Serve their portion before the lemon goes in — some kids read acid as 'sour' rather than 'bright'. The crisp gnocchi and fried sage leaves usually do the convincing on their own.
🌿 From the garden
Sage is a perennial in zone 6a and one of the easiest herbs you will ever grow — one plant by the back door survives Ohio winters and gives you leaves for this from April to November.
🥡 Leftovers
Eat it the night you make it. Crisp gnocchi go soft in the fridge and no amount of reheating brings the shell back.
