Air Fryer Churros
A real choux paste piped, air fried and rolled in cinnamon sugar, with a proper chocolate sauce for dipping. Thirty minutes, no vat of oil.

Ingredients
- 1 cup All-purpose flour
- 4 tbsp Unsalted butter
- 2 Eggs (large)
- ½ cup Granulated sugar
- ½ tsp Kosher salt
- 2 tsp Ground cinnamon
- 1 tsp Vanilla extract
- 4 oz Dark chocolate (70%)
- ½ cup 1% milk
- 1 tbsp Canola oil
Method
- Bring 1 cup water, the butter, salt and 1 tablespoon of the sugar to a boil. Dump in the flour all at once and stir hard over the heat for 2 minutes until it forms a smooth ball that leaves a film on the pan bottom.
- Cool 5 minutes, then beat in the eggs one at a time and the vanilla. It will look broken after each egg and come back together — keep beating.
- Pipe 5-inch lengths through a large star tip straight into the air fryer basket, lined with perforated paper. The ridges from the star tip are structural: they give the churro its crisp edges.
- Mist with oil and air fry at 375°F for 10-12 minutes until golden and firm.
- Toss the hot churros in the remaining sugar mixed with the cinnamon.
- Sauce: warm the milk and pour it over the chopped chocolate, then stir until glossy. Spanish chocolate for churros is thick enough to coat — it is a dipping sauce, not a drink.
