Smashed Chickpea Salad Sandwich
Ten minutes, no cooking, and it holds up in a lunchbox better than anything with meat in it. Celery and pickle do the work here.

Ingredients
- 2 cans Chickpeas, canned no-salt-added, drained
- 3 tbsp Olive oil mayonnaise
- 3 tbsp Plain nonfat Greek yogurt
- 2 tsp Dijon mustard
- 3 stalks Celery, diced small
- ¼ Red onion, minced
- 3 tbsp Dill pickles, chopped
- 2 tbsp Fresh dill, chopped
- ½ Lemon
- ½ tsp Kosher salt
- ½ tsp Black pepper
- 8 slices Whole grain bread
- 4 leaf Butter lettuce
- 2 Roma tomatoes, sliced
Method
- Smash the chickpeas with a fork or a potato masher until about two-thirds are broken and a third are still whole. That mix of textures is what makes it read as a salad rather than a paste.
- Fold in everything else except the bread and the lettuce and tomato.
- Taste for salt, lemon and pepper. It should be sharper than seems right in the bowl — bread mutes everything.
- Build on toasted bread with lettuce laid against both slices as a moisture barrier, then tomato, then the filling.
Notes
