Vanilla Chia Pudding
Four ingredients, ten seconds of stirring, and 10 grams of fiber per cup. The kids treat it as dessert; that is fine.

Ingredients
- ½ cup Chia seeds
- 2 cups Unsweetened soy milk
- 2 tbsp Pure maple syrup
- 1 tsp Vanilla extract
- 1 cup Strawberries, sliced
- ¼ cup Raw almonds, sliced and toasted
- 2 tbsp Unsweetened cocoa powder (optional)
Method
- Whisk chia, soy milk, maple and vanilla. Wait 5 minutes and whisk again — that second whisk is what prevents a clump at the bottom of the jar.
- Refrigerate at least 3 hours or overnight.
- Top with strawberries and toasted almonds. For the chocolate version, whisk the cocoa in at the start.
