Build-a-Bowl (the Formula)
Not a recipe so much as an equation: grain plus roasted vegetable plus protein plus sauce plus crunch plus acid. Learn it once and you never need a recipe for lunch again.

Ingredients
- 1 cup Farro (dry), dry — or quinoa, or brown rice
- 1 head Broccoli, florets — or any roastable vegetable
- 2 Sweet potato, diced
- 1 can Chickpeas, canned no-salt-added, drained and dried
- 3 tbsp Extra-virgin olive oil
- ¼ cup Tahini
- 3 tbsp juice Lemon
- 1 clove Garlic, grated
- 4 tbsp Pumpkin seeds (pepitas)
- ½ cup Flat-leaf parsley, chopped
- ½ Red onion, thinly sliced and quick-pickled
- ½ tsp Black pepper
- ½ tsp Kosher salt

Add any leftover protein
Sliced chicken, salmon, a jammy egg — the formula does not care.
Method
- GRAIN: cook 1 cup dry farro like pasta in salted water, 25 minutes, drain. Makes about 3 cups.
- ROASTED: toss vegetables and dried chickpeas with 2 tbsp oil and salt; roast at 425°F for 25-30 minutes.
- SAUCE: whisk tahini, lemon, garlic, a pinch of salt and cold water until pourable.
- PICKLE: cover the sliced onion with red wine vinegar and a pinch of salt while everything roasts. Twenty minutes is enough.
- CRUNCH: toasted pepitas, or toasted panko, or the crispy chickpeas.
- ASSEMBLE in that order — grain, roasted things, sauce, pickle, crunch, herbs — and finish with black pepper and the last of the olive oil.
- The rule: every bowl needs something soft, something crisp, something acidic, and something fatty. If a bowl tastes boring, it is missing acid.
