Berry Beet Smoothie

A cooked beet, frozen berries and ginger. Deep magenta, faintly earthy, and beets are one of the few foods with a real trial behind their blood-pressure claim.

Ingredients

  • 1 Beets, cooked and peeled
  • 1 ½ cups Frozen mixed berries
  • 1 Bananas, frozen
  • ½ cup Plain nonfat Greek yogurt
  • 1 cup Oat milk
  • 1 tsp Fresh ginger, grated
  • ½ Lemon
  • 1 tbsp Ground flaxseed

Method

  1. Blend everything until completely smooth, about 60 seconds. Liquid goes in first, frozen things last — that is how a blender avoids an air pocket under the blades.
  2. Taste. Beets are sweet but earthy; the lemon is what makes it read as fruit rather than as vegetable.
  3. Vacuum-packed cooked beets from the produce section make this a five-minute drink instead of an hour.
