Two-Minute Berry Banana Soft Serve

Frozen banana blended until it stops being a fruit and starts being ice cream. There is no dairy in it and nothing added, and it genuinely works — the trick is patience with the blender.

Ingredients

  • 4 Bananas, very ripe, sliced and frozen
  • 1 ½ cups Frozen mixed berries
  • 3 tbsp Oat milk
  • 1 tsp zest Lemon
  • ½ tsp Vanilla extract
  • 3 tbsp Raw almonds, toasted and chopped (optional)
  • 1 oz Dark chocolate (70%), shaved (optional)

Method

  1. Freeze the sliced bananas at least four hours ahead, on a tray so they do not fuse into a brick. This is the only planning the recipe asks for.
  2. Put the frozen banana, berries, oat milk, lemon zest and vanilla in the processor. This is the grown-up step.
  3. Run it. It will go through gravel, then crumbs, then a paste, and then quite suddenly turn smooth and glossy like soft serve. That takes about two minutes and most people give up at ninety seconds.
  4. Scrape the sides down once during that, and add oat milk a teaspoon at a time only if it truly will not come together.
  5. Serve immediately in cold bowls, with the almonds and shaved chocolate over the top.

Notes

✨ The restaurant touch
The lemon zest. You will not taste it as lemon — it stops the banana tasting flat and sweet, which is exactly what a bright note is for.
🧒 For the kids
Let them watch through the lid. The moment it turns from crumbs into ice cream is genuinely surprising, and it is the reason this gets requested again.
🥡 Leftovers
Eat it now. Refrozen it becomes a solid block; let it sit 15 minutes and re-blend if you must.
