Blueberry Baked Oatmeal

Ingredients
- 3 cups Old-fashioned rolled oats
- 2 ½ cups Unsweetened soy milk
- 2 Eggs (large)
- ⅜ cup Pure maple syrup
- 2 tbsp Ground flaxseed
- 2 tsp Baking powder
- 2 tsp Ground cinnamon
- 2 tsp Vanilla extract
- 2 cups Blueberries
- ½ cup Walnuts, chopped
- 1 Bananas, mashed
Method
- Heat oven to 375°F and oil a 9x13 dish.
- Whisk soy milk, eggs, maple, mashed banana and vanilla. Stir in oats, flax, baking powder and cinnamon.
- Fold in most of the blueberries, pour into the dish, and scatter the rest of the berries and the walnuts over the top.
- Bake 35-40 minutes until set in the center and golden at the edges.
- Cool 10 minutes before cutting into 8 squares.
Notes

- A spoon of Greek yogurt and a drizzle of maple on the plate turns a square of baked oatmeal into a café breakfast.

- Serve warm with a splash of cold milk poured over. Chocolate chips instead of half the blueberries buys a lot of goodwill.
