Overnight Baked French Toast
Assembled the night before, baked while people open presents. Feeds eight and makes the house smell like a holiday.

Ingredients
- 12 slices Whole grain bread, cut into cubes, slightly stale
- 6 Eggs (large)
- 4 Egg whites
- 2 ½ cups 1% milk
- ⅜ cup Pure maple syrup
- 2 tsp Vanilla extract
- 2 tsp Ground cinnamon
- ½ tsp Kosher salt
- 1 ½ cups Blueberries
- ½ cup Pecans, chopped
- 1 cup Plain nonfat Greek yogurt (optional)
Method
- Butter or oil a 9x13 and pack in the bread cubes and berries.
- Whisk eggs, whites, milk, maple, vanilla, cinnamon and salt until completely uniform, and pour over. Press the bread down so every piece is soaked.
- Cover and refrigerate overnight — at least 4 hours. This is not a shortcut you can skip; the custard has to get inside the bread.
- In the morning, scatter the pecans over and bake uncovered at 350°F for 45-50 minutes until puffed and set in the middle.
- Rest 10 minutes. Serve with yogurt and a little more maple.
Notes

- Slightly stale bread. Fresh bread turns to pudding; day-old bread holds its shape and gives you edges.

- Kids can tear the bread and scatter the berries the night before. It is the ideal Christmas Eve job.
