Everything Avocado Toast with Smashed White Beans

Ingredients
- 4 slices Whole grain bread
- 1 cup Cannellini beans, canned no-salt-added, drained and rinsed
- 2 Avocado
- 2 tbsp juice Lemon
- 1 tbsp Extra-virgin olive oil
- 2 tsp Everything bagel seasoning
- ¼ tsp Red pepper flakes
- ¾ cup Cherry tomatoes, halved (optional)
- 1 clove Garlic, halved
Method
- Toast the bread hard — properly crisp, so it does not collapse — and rub each slice with the cut side of a garlic clove while it is still hot.
- Smash the beans with the olive oil, half the lemon juice and a pinch of salt until rough and spreadable.
- Smash the avocado separately with the rest of the lemon juice. Keeping them separate gives you two textures instead of one grey paste.
- Spread beans first, avocado on top, then everything seasoning, pepper flakes and tomatoes.
