Any-Vegetable Roast (the Method)
One temperature, one technique, every vegetable. This is the skill that makes vegetables the best thing on the plate instead of the obligation.

Ingredients
- 1 head Broccoli, florets — or substitute any vegetable below
- 4 Carrots, cut on the bias
- 2 cups Brussels sprouts, halved
- 3 tbsp Extra-virgin olive oil
- ¾ tsp Kosher salt
- ½ tsp Black pepper
- 1 Lemon, cut into wedges
- 3 cloves Garlic, smashed (optional)
Method
- 425°F, always. Lower and vegetables steam; higher and the outside burns before the inside softens.
- Cut everything the same size, then toss with enough oil that every surface is glossy — under-oiling is the most common reason home roasted vegetables are leathery instead of caramelized.
- Spread on the pan with actual space between pieces. Two pans is not a failure, it is the recipe. Crowding is the second most common reason.
- Put the cut sides down and do not stir for the first 15 minutes. Contact with hot metal is where browning happens.
- TIMING: broccoli, cauliflower, asparagus, green beans 20-25 min. Brussels sprouts, carrots, sweet potato, squash 25-35 min. Zucchini, peppers, onions 20 min. Tomatoes 25 min.
- Finish with acid off the heat — lemon, a splash of vinegar, or balsamic. That final squeeze is what makes people go back for more.
Notes
- ✨ The restaurant touch
- Preheat the sheet pan in the oven and add the vegetables to hot metal. Immediate sizzle, better crust.
- 🧒 For the kids
- Roast a batch of 'broccoli trees' or 'carrot coins' with nothing but oil and salt. Kids often reject seasoning, not vegetables.
- 🌿 From the garden
- This is the method that absorbs anything the garden produces in quantity.
- 🥡 Leftovers
- 4 days. Cold roasted vegetables belong in tomorrow's grain bowl, eggs, or a sandwich.
